This Middle Eastern comfort food is really, really easy to prepare. ESPECIALLY if you live near Trader Joe’s where you can buy pre-cooked lentils (refrigerated produce section) and brown rice (vacuum-packed, grains section) in the exact amounts of the recipe below. That’s what I used, as we had some left over from a trip to Mexico; all I had to do was saute the onions!
Took me about 10 minutes to prepare.
Mujadara
Makes 4 servings – great for work week lunches!
- 1 lb cooked lentils from 2 1/4 cups dry
- 2 cups cooked brown rice
- 1 yellow onion, sliced
- 1 tsp olive oil
- pinch salt
Heat the olive oil in a pan on medium to medium-high. Add the onions and salt and saute til golden – about 5 to 10 minutes. Stir in brown rice and lentils and cook over low heat for a few minutes. Done!
