Holiday Carrot, Banana, and Almond Butter Smoothie

This has become one of my new favorite snacks – the nutmeg and cinnamon make it almost like a healthy replacement for eggnog.

As in most smoothie recipes, you’ll want to adjust the amounts of each ingredient to taste; adding more almond butter will make a richer, thicker drink.

Holiday Carrot, Banana, and Almond Butter Smoothie

  • 1 cup carrot juice (if you have a juicer or Vita-Mix, make your own!)
  • 1 banana
  • 1/2 cup almond or soy milk
  • 1-2Tbsp almond butter
  • pinch cinnamon
  • pinch nutmeg
Blend it all up and enjoy!
