I had pre-ordered a bunch of copies of the Forks Over Knives companion book for the film, received them three days ago and have already tested out three of the 125 recipes. This cookbook is AWESOME.

Blueberry Oat Breakfast Muffins (with canned sweet potato and whole oat flour, they are around 17% protein, 5% fat – next on my list to test!)

This recipe collection is not just awesome because the recipes are simple yet delicious and make a perfect intro to cooking plant-based with minimal transition pains, BUT because most of the recipes come from other cookbooks so you get a free sampling of a wide variety of other references you may want to add to your collection! Almost immediately I ordered one such book based on the strength of the recipes included in the FoK book: Unprocessed by Chef AJ. The desserts in this book, made with no oils or sugars (whole dates provide sweetness), look…so…good. For example: Orange Chocolate Mousse Torte, Banana Strawberry Mousse Tart, Macadamia Nut Creme topping…sigh.
I have already tested the Oven Roasted Caramelized Onions recipe (no salt, no sugar) and it really made tonight’s Mujadara – they were super sweet tasting and smelled really good as they cooked.

Do the FOK or the "Unprocessed" cookbooks have pictures for each recipe? I love to see the picture before attempting a new dish.
They do not; they're pretty densely crammed with recipes. But there are videos of Chef AJ making some of her recipes here where you can see the finished product.

WOW, the chef herself!! We actually just watched some episodes: so helpful to see the recipes demonstrated and get a dietician's advice at the same time...and the episode with Dr. Fuhrman: hilarious!
