Busy? I know we are. Between teaching two math classes at VCU and taking a full load of graduate math classes, I haven’t had time to do a damn thing for the last 2 months – hence the lack of posts. I’m already looking forward to winter break!
BUT, I do want to finally let those of you in the Richmond area know that if you’re as insanely busy as I am, there is help! Our friend Yeshi of Nile Ethiopian Restaurant (our favorite local spot) is offering healthy, plant-based, low or no-oil meals for pick-up!
Get your lunches or lunch and dinner for the week in advance and not only is it probably healthier than what you’d grab when you’re starving, it’s one less thing to worry about!
