Recently, we appeared on regional CBS6 to promote Meatless Mondays and share as much as we could about the benefits of going 100% plant-based in the 10 minutes of air time we had! I also shared this recipe for white bean chili – a revamp of a recipe I posted a few years ago that I used to make almost every day for lunch!

We were also on air to promote the fact that our local school system has adopted the Meatless Monday program, which we are very excited about. As parents (and as all-around logical human beings as I’m sure many of you are) we recognize the importance of early nutrition in producing healthy adults free of chronic disease. In a society in which childhood obesity has doubled in the last thirty years and some 25% of toddlers eat ZERO fruits and vegetables, we see the benefits of a vegan diet every day when we look at our son. He’s been sick with a high fever (the flu) once, when he was 10 months old. Now three, he is so glowingly healthy and vibrant…and has made a preschool-wide reputation for himself in feats of physical fitness. He is nearly always in high spirits, compassionate and loving – never moody or high-strung as unfortunately so many other kids who are fed terrible food and then not encouraged to be physically active seem to be. Remembering what it was like to be an obese child, I feel for these kids; I know one day a week of going without meat will not in itself yield great benefits, but I’m hoping it will plant a seed.
